Try this Cocoa Curry Spice Rub it's incredibly flavorsome and totally different from the norm.
Using cocoa intensifies the flavors from the cumin without leaving the dish chocolaty or gummy - it totally works.
I used chicken but this will work just as well on pork and maybe some denser types of fish and vegetables (I'm thinking potatoes or sweet potatoes).
Make sure you coat your meat/fish or veg in advance and leave in the fridge for a couple of hours for the flavors to evolve.
I baked mine in the oven and served it with a simple salad with my Buttermilk Ranch Dressing rather than an oily, citrussy one as I thought it would pair better. It worked for me!
