This incredible dish is one of my all time favourites and is so simple to make it's criminal.

 

Paprika and peppercorns combined with the freshness of chopped herbs gives this dish a unique spicy zing that is evened out by the addition of the creamy cheeses.

It's definitely one to try.

 

It does have a high fat content so it's not one to make every day BUT it is one to make for a treat and for those who enjoy cheese, like me, it's always a winner.

 

So, DON'T make this dish if:

You care too much about what you eat that it stops you from eating dishes, like this, that are way too yummy to enjoy.

 

DO make this dish if:

You love food and new food combinations, love to eat well but will eat salads and vegetables for the next couple of days to compensate for the excess of loveliness that you are about to consume.

 

COOK, EAT, ENJOY, BE MERRY!

Creamy Cheesy Herbed Chicken
Ingredients: 

This is for 4 people

4 Chicken breasts, sliced into ½ inch strips

2 teaspoons paprika

1 teaspoon cracked black peppercorns

250g packet cream cheese

⅓ cup grated fresh Parmesan cheese

1 cup water

1 small chicken stock cube, crumbled

1 tablespoon chopped basil

1 tablespoon chopped fresh parsley

1 tablespoon chopped fresh mint

40g butter
 

 

The Mix: 

1.    Combine chicken, paprika and peppercorns in a bowl; cover and put in fridge for 20 minutes 

2.    Blend or process cheeses, water, stock cube and herbs until almost smooth

3.    Melt butter in pan, add chicken mixture, cook stirring over high heat until well browned

4.    Add cheese mixture, bring to boil, simmer uncovered for 5 minutes

Serve with plenty of freshly cooked homemade spaghetti or tagliatelli and a simple green side salad tossed with lemon and olive oil
