True to form with me and making desserts, if it isn't easy it doesn't get made!

I am not ashamed to admit that I have no patience when it comes to making desserts and really do embrace a "bung it all in" attitude, sometimes it works, other times....not-so-much!
This is a great dessert for non-pudding eaters as it's not too sweet and you don't have to eat large amounts of it to enjoy it.

This dessert is awesome; It's simple and it's really tasty.
If you've ever been to France and had Tarte au Citron you'll remember the filling as zesty but creamy and with a thick, smooth, creamy texture.
This dessert is Tarte au Citron without the pastry!

I'm not sure whether I prefer this Delicious Lemon Pudding hot or cold - either way is is great.
You can enhance it with fresh fruit but my preference is either a fresh berry coulis or a zesty sweetish lemon sauce.
A little poured over the top balances out the creaminess and brings a new dimension to the dessert.

I made this dessert in larger dishes but also in smaller pots that I could use as part of a dessert trio.
They were an incredible addition but remember, if you are going to use smaller dishes adjust the cooking time so you don't over cook it.

Delicious lemon Pudding

When cooked they should be soft at the bottom and firmer at the top.....yummy!

Delicious Lemon Pudding
Ingredients: 

Recipe for 6 large servings

125g Butter - melted
2 tsp Lemon Rind - grated finely
330g Castor Sugar
3 Eggs - separated
75g Self Raising Flour
80ml Lemon Juice
330ml Milk

The Mix: 

Pre-heat oven to 180°c/160°c fan-assist.
Grease 6 250ml oven proof dishes

Combine butter, rind, sugar and yolks in a large bowl.
Stir in flour then juice.
Gradually stir in milk - mixture should be smooth and runny.

Beat egg whites with an electric mixer until soft peaks form.
Fold into lemon mixture in 2 batches.

Divide mixture among oven proof dishesand place into a roasting tray with sides.
Add enough boiling water to the roasting tray to come half way up the sides of the oven proof dishes.
Bake, uncovered, for about 45 minutes.

Serve and enjoy!
