Gateau Basque is found everywhere in the Pyrenees and should be tasted at every opportunity!

 

Gateau Basque is a traditional dessert from the Basque region and is typically made with layers of an almond flour based cake with a filling of either pastry cream (a la creme) or preserved cherries (cerise noir) although other variations are out there. 

 

These photos are of Gateau Basque Myrtilles (blueberries).

There is always one of these in our freezer for when we feel the need although as every Boulangerie sells them we are rarely without.
