Mediterranean Chicken Leek Tomato Mash

Mediterranean Chicken with Leek Tomato Mash is a simple, light and flavorsome dish that needs little preparation yet yeilds incredible results.
It's a healthy dish that can be cooked in the oven or on a BBQ depending on the season.

I used chicken for this dish but any white fish would do just as well with the delicate flavors.
The key is the preparation which, like I said isn't much but will help you loads if done in advance.

The "Mash" part is from Leeks and tomatoes.
The leeks are chopped and pre-cooked and the tomatoes de-seeded, then everything is mixed and roasted with olive oil.
As the tomatoes cook they break down and the result combined with the leek is a vegetable mash.

Remember, when you cook the chicken you should use a solid bottom pan or tray so that the marinade doesn't fall off and into the bottom of your BBQ or oven.

Mediterranean Chicken with Leek Tomato Mash

Recipe for 6 people

½ the recipe for Sun-dried Tomato and Olive Marinade, which is on this site
6 Chicken Breasts - flattened slightly (Place between 2 sheets of cling film and hit with tenderizing hammer or the bottom of a heavy saucepan)
1 Leek - trimmed and washed
3 large Tomatoes
Olive Oil for frying
Salt and Pepper for seasoning

The Mix: 

Make the marinade as per the instructions
Generously smother the chicken breasts with the marinade on both sides leaving the rest for the top side
Place on a baking tray or sheet

Place the leek in a food processor and process until finely chopped
Place a frying pan on medium heat and pour in olive oil to cover base
Add leeks and cook slowly until tender but not colored - around 5 minutes
Cut tomatoes into 6 wedges, remove seeds and stalks and place into a mixing bowl
Add leeks to tomatoes, mix and season - gently, be careful not to break up the tomatoes
Place mixture onto an oven proof tray or dish uncovered and drizzle with olive oil

Place the chicken on to the BBQ or in the oven - 160ºc fan assist or equivalent and cook without turning for 20 minutes
After the chicken has been in for 10 minutes add the leek/tomato mixture and cook for 10 minutes with out stirring

When cooking time is up - take chicken out of oven, cover with tin foil and allow to rest for 5 minutes

To serve, place a heaped spoon of Leek Tomato Mash under the chicken breast and spoon remeinder of cooking liquid over the top

Try this Ravenswood Zinfandel, although not a classic pairing I think it works.
