Strawberries with Balsamic

When it comes to making desserts, especially in the summer, I like to keep it simple and fresh.


I believe in letting the summer flavours speak for themselves and nothing does it better than this version of Strawberries in Balsamic.


The balsamic brings out the flavour of the strawberries and the mint complements both.


This can be made two hours ahead of time and kept in the fridge to chill.


When ready to serve top with a generous dollop of sweetened Creme Fraiche along with a glass of something chilled and sparkling.


Minted Strawberries with Balsamic

For the Strawberries

1 lb Strawberries - washed and hulled

4 tsp Demerara (brown) sugar

2 tsp Balsamic Vinegar

2 tsp mint - washed and finely chopped

sprinkle of fresh ground pepper


Sweetened Vanilla Creme Fraiche

4 tbsp thick Creme Fraiche

2 tbsp castor sugar

½ tsp vanilla essence



The Mix: 


Place strawberries, Balsamic vinegar, sugar, mint and pepper in a bowl and lightly mix until everything is coated

Cover and place in fridge to chill


Creme Fraiche

Put Creme Fraiche, sugar and vanilla in a bowl and mix until sugar has dissolved


To serve

Spoon strawberries along with "juice" (there will be a lot of that in the bottom of the bowl!) onto a plate and serve a healthy dollop of Creme Fraiche on the side. Yummy!
