When it comes to making desserts, especially in the summer, I like to keep it simple and fresh.
I believe in letting the summer flavours speak for themselves and nothing does it better than this version of Strawberries in Balsamic.
The balsamic brings out the flavour of the strawberries and the mint complements both.
This can be made two hours ahead of time and kept in the fridge to chill.
When ready to serve top with a generous dollop of sweetened Creme Fraiche along with a glass of something chilled and sparkling.
