Chocolate lovers among you will be well aware of this yummy French dessert.

It's on menu's all over France and is a staple of many households especially when it's a special occasion.

The usual method of making Moelleux au Chocolat is quite involved and to be honest I don't have the patience to go there so I have adapted the recipe to make it quick and easy.

The result is a dense rich chocolate cake on the outside and gooey, soft almost lava like centre; chocolaty enough to satisfy anyones chocolate cravings.

Ingredients: 

This recipe is for 4 servings

200g dark chocolate (you can use milk chocolate if you prefer a creamier taste)

150g unsalted butter

100g icing sugar

50g plain flour

4 eggs

The Mix: 

Turn oven to 200c, 180 fan assist

Grease 4 ramekin dishes

Melt the butter and chocolate in a bowl over simmering water

Mix icing sugar and flour in a separate bowl, add the eggs and mix well

When butter and chocolate has melted add to flour mixture and mix in until well combined

Divide mixture into ramekins leaving about 1cm to the top

Place into middle of the oven and cook for about 12 minutes until mixture has risen above the rim of the ramekin, about 1 inch. The centres will be runny, if you prefer a harder texture leave in for a further 2 minutes.

Wait about 2 minutes to cool slightly then serve in the ramekin with a fruity berry coulis and a scoop of vanilla ice cream or a spoon of sweetened creme fraiche

 

Alternatively you can bake the mixture in a lined cake or sandwich tin and once cooked leave to cool for 10 minutes before cutting into wedges and serving. Cooking time will be a bit longer this way.
OR
Cook mixture in a greased muffin and turn individual puds out before serving with some yumminess!
