Often when I'm looking for something different to eat on a cold day I go to the fridge and see what there is to make soup with.
More often than not there are a few stray mushrooms sitting there along with an onion or two and, of course, there's always a tub of creme fraiche.
So, Mushroom Soup it is then!
This may be a quick and easy version but there's nothing wrong with the flavor and quality of this Quick & Easy Mushroom Soup.
I use chicken stock but veggie stock will work just as well.
Also, if you don't want to use creme fraiche you can substitute with natural yogurt or double cream.
The mushrooms are your bog standard white ones but I do add others depending on the time of year and what's available.
One thing is certain though; I don't use tinned mushrooms or mushrooms out of a jar as they just don't do it for me. You can try them if you have nothing else though.
The whole thing should take you about 30 minutes, max.
