
I love a savory cake or savory bread especially when it's straight from the oven and accompanied by a tasty soup and big chunks of butter.
I can hear you now, sighing at the thought of so much cholesterol, but wait, it 'aint so bad and a little fat never hurt anyone especially if the rest of the dish is low in fat.
This recipe for Savory Smoked Ham and Cheese Muffins is a great one to have in your repertoire.
These can be batch made and frozen for use when you need them or, if they make it that far, they can be used to accompany salad at lunch and soup at dinner.
The centre of these little beauties will have pockets of melted cheese depending how you the cheese is cut (cubed vs grated) so don't be alarmed if the texture is dense, that's the way it's supposed to be.
In France they make a version of these muffins but they make it in loaf form so a slice can be eaten with breakfast or cubes can be cut to accompany an aperitif.
You can make this recipe in a loaf tin but the cooking time will be longer - approx. 40 - 45 minutes.
The flavor is best if the muffins are warm when eaten so re-heat in the oven or microwave.
Also, cheese wise, I use a combination of Parmesan for zestiness and Gruyere for the nutty flavor but you can use cheddar or even goats cheese if that's your thing.
Ham wise, smoked ham has better flavor for me but you could also use pre-cooked bacon bits or unsmoked ham.
Olives, are optional. I have a hard time with olives at breakfast but i'll add them in if i'm going to use them for lunch and dinner.
Finally, the healthy part. These muffins are quite filling and so work well with soups and foods that aren't too creamy.

Savoury muffins are just so good and I never think to make them. Definitely going to try these out. I love the idea of a loaf cut into cubes with an aperitif too.
