
Everyone loves a dip, they are easy to prepare and are great to have around for guests to nibble on when entertaining.
This Whipped Feta, Lemon and Chilli Dip is a little different from the norm and brings a refreshing zesty flavor with a hint of heat and plenty of creaminess.
Don't get me wrong it's not a totally creamy-in-your-face dip, it's light and fluffy and the sourness of the Feta is complemented by the lemon juice which makes this a perfect accompaniment to many things.
You can use this as a dip with pita chips and olives but it's equally at home with vegetables (hot and cold), salads, meats, fish and even baked potatoes - it's pretty versatile.
Be sure to make this ahead of time as it's best when it's been in the fridge for a while.
Ingredient wise it's pretty straight forward but the Olive Oil and Smoked Paprika are the stars of the dish.
Their addition at the end just before serving bring a new dimension to the already incredible flavors.
Make sure your olive oil is a good quality extra virgin olive oil and that your smoked paprika is fresh, not one that's been in the cupboard for years!
You can add more chilli or use fresh chilli if heat is your thing but remember not to overshadow the Feta.
