Di brings a selection of cheeses from different countries that fall into the major categories of Bloomy, Hard, Fresh and Blue.
She explains of each category and a brief summary of how the cheeses are made.
The accompaniments will consist of some “flexible” wines that pair with many cheeses along with a fortified option and wines designed for just one partner.
Di will explain each wine, where it originates and why it pairs with the cheese/s she has chosen.
Bringing Port into the equation Di will discuss it’s history, it’s relationship with cheese and why, although incredible, it may not be the best choice for your cheeseboard.
You will taste each wine with all of the cheeses starting from light to heavy and figure out what works or not for you.
