Classic Caesar Salad is a dish bathed in history and through time there have been many variations of the classic dressing associated with it.
This dressing is no exception to that!
This dressing is just a great little salad dressing that just happens to work really well in a Caesar Salad. It's an incredibly versatile dressing.
I'm forever making dressings as I tend to eat a lot of salads and more often than not, if i'm looking for a zesty garlicky kick, i'll use this recipe.
Plus the longer you keep it in the fridge, the better the flavors become.
There are no anchovies in this recipe but you could add one at the same time as crushing the garlic if anchovies are your thing.
Also, the recipe calls for one garlic clove. You can add more if you want a really pungent finish which is great with chicken.
Sometimes I add more lemon juice and salt to give it a little kick and a different dimension.
Finally, I make this two ways: either whisked with a fork for a more natural texture or hand-blended with an electric blender for a thicker, smoother texture - the choice is yours.
