Often when I'm looking for something different to eat on a cold day I go to the fridge and see what there is to make soup with.
More often than not there are a few stray mushrooms sitting there along with an onion or two and, of course, there's always a tub of creme fraiche.

So, Mushroom Soup it is then!

This may be a quick and easy version but there's nothing wrong with the flavor and quality of this Quick & Easy Mushroom Soup.

I use chicken stock but veggie stock will work just as well.
Also, if you don't want to use creme fraiche you can substitute with natural yogurt or double cream.

The mushrooms are your bog standard white ones but I do add others depending on the time of year and what's available.
One thing is certain though; I don't use tinned mushrooms or mushrooms out of a jar as they just don't do it for me. You can try them if you have nothing else though.

The whole thing should take you about 30 minutes, max.

Quick & Easy Mushroom Soup

Best eaten with crusty bread along with a glass of vintage Champagne!

Quick & Easy Mushroom Soup

Recipe for 2 people

200g Mushrooms - cleaned and cut into ¼
1 small Onion - roughly chopped
1 pinch Thyme
500ml Chicken of Vegetable Stock
2 heaped tbsp Creme Fraiche
2 tbsp Vegetable Oil
Salt and Pepper for seasoning

The Mix: 

Put the oil, mushrooms, thyme and onion into a medium sized saucepan and turn heat to medium
Stir, put lid on and let cook for 5 minutes stirring occasionally
Add stock and a pinch of salt and pepper, bring to a boil then turn heat to simmer
Let simmer for 15 minutes with the lid on
Blitz with a hand blender or regular blender to your preferred consistency
Stir in creme fraiche and adjust seasoning

Et voila!
Quick & Easy Mushroom Soup, ready to be eaten with crusty bread....Yummy!

You may as well indulge if you can with this dreamy vintage Champagne which will pair both with the mushrooms and the cream.
